The Florence Elston Inn & Conference Center will host a six-course French wine dinner with sommelier Stan Davis from 7 to 9 p.m. Thursday, Oct. 25 at Sweet Briar College.
Davis is a veteran of 20 years in the wine industry and works for Roanoke Valley Wine Co., a distributor of boutique wines from around the world. He will explain the wine pairings and offer tableside expertise.
Elston executive chef Glenton Goodwill’s menu will start with jumbo shrimp with cocktail sauce, tomato mozzarella basil croustades and his signature hors d’oeuvres, paired with Saint Hilaire Brut sparkling wine.
For his main courses, Goodwill has created such combinations as Virginia apple wood-smoked trout with wasabi and horseradish sauce. A lentil and duck confit risotto with foie gras is accompanied by a caramel garlic sauce and paired with Chateau Guicharde Cote du Rhone Rouge, while a sun-dried tomato and rosemary jus complement seared lamb chops with three-bean cassoulet served with Chateau Grimard Bordeaux Rouge.

The cost is $55 per person or $90 per couple (including wine). Faculty and staff prices are $40 per person or $70 per couple.
In addition to offering lodging and catering, Sweet Briar’s conference center hosts occasional themed dinners throughout the year. A Thanksgiving buffet is planned from 2 to 5 p.m. Nov. 22. Tickets are $24, $12.95 for children 12 years and younger, and must be reserved by Nov. 19. Menus for upcoming dinners are posted online.
