In “Kokomo,” the Beach Boys promised, “We’ll be falling in love to the rhythm of a steel drum band” as they sang about the pleasures of Caribbean living.
The Florence Elston Inn can’t guarantee you’ll leave on the arm of someone special, but they do promise a night of great music and food at “Jamaican Night Under the Stars,” a Jamaican-themed, all-you-can-eat buffet 7 to 10 p.m. on Thursday, Aug. 30.
Admission is $22 for Sweet Briar faculty, staff and students, and $28 for the general public. Dinner and live music from a steel drum band is included, as is a complimentary Jamaican rum punch for those of drinking age. A full cash bar also will be available.
The event will be held on the terrace at the conference center, or indoors in case of rain.
The menu was created by the Florence Elston Inn’s executive chef, Glenton Goodwill, a native of Jamaica. Goodwill trained in the Caribbean and honed his skills at Boonsboro Country Club, The Homestead Resort and The Grand Hotel at Mackinac Island, Michigan.

Peel and eat crawfish and shrimp with spicy remoulade sauce
Oyster on the half shell with cocktail sauce and remoulade sauce
Escovitch — Fresh catch of the day, marinated in traditional seasonings and fried to lock in flavor, topped with a beautiful array of red and green peppers, onions and cilantro
Brown Stew Chicken — Traditional spicy brown stew chicken with seasonings, grilled to perfection
Jerk Pork Chops — Center-cut chops, boneless and lean, rubbed with seasonings and grilled
Reggae Burger — Topped with mushrooms, avocado, bacon and shredded coconut
Shrimp and Lobster Stir Fry — Flavored with Jamaican fresh herbs and spices, peppers, onions and carrots
Baked whole snapper fish with homemade calypso sauce
Rice and Peas — Exceptionally flavorful rice and peas made with coconut milk
Fried Plantains – Savory and ripe pan-friend plantains
Jamaican Patties – A Jamaican must-have, flaky crust enclosed around seasoned beef and baked to perfection (Jamaican version of hamburger)
